  • 8 slices (about 8 oz / 225g) thick-cut bacon
  • 1 small yellow onion, finely diced (about 1/2 cup / 75g)
  • 2 cloves garlic, minced
  • 8 oz (226g) cream cheese, softened
  • 1/2 cup (120ml) sour cream
  • 1 cup (100g) shredded sharp cheddar cheese
  • 1/2 cup (50g) shredded Monterey Jack cheese
  • 2 tablespoons (30ml) ketchup
  • 1 tablespoon (15ml) yellow mustard
  • 1 tablespoon (15ml) Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/2 cup (60g) dill pickle slices, chopped
  • 1/4 cup (30g) diced tomato
  • 2 tablespoons (8g) chopped fresh parsley or chives
  • Extra shredded cheddar and crumbled bacon for garnish
  • 1 large baguette (about 12 oz / 340g), sliced into 1/2-inch rounds
  • 2 tablespoons (30ml) olive oil or melted butter
  • Pinch of salt and garlic powder for the baguette

Instructions

  1. Preheat your oven to 375°F (190°C). Position a rack in the middle of the oven.
  2. Cook the bacon: Place bacon slices in a cold skillet. Turn heat to medium and cook, flipping occasionally, until crispy, about 8-10 minutes. Transfer to a paper towel-lined plate to drain. Once cool, crumble or chop into small pieces. Reserve about 1 tablespoon of bacon fat in the skillet.
  3. Brown the ground beef: In the same skillet with reserved bacon fat, add ground beef. Cook over medium-high heat, breaking it up, until browned and cooked through, about 6-8 minutes. Drain excess fat if needed, leaving a little for moisture. Season with salt, pepper, and garlic powder.
  4. Cook the onion and garlic: Add diced onion to the skillet with the beef. Cook for 2-3 minutes until softened. Add minced garlic and cook for another 30 seconds until fragrant.
  5. Make the dip base: In a large mixing bowl, combine softened cream cheese, sour cream, ketchup, mustard, and Worcestershire sauce. Mix until smooth and well combined.
  6. Combine everything: Add the beef and onion mixture to the bowl with the cream cheese mixture. Add 3/4 cup of the shredded cheddar and 1/4 cup of the Monterey Jack cheese (reserve the rest for topping). Add half of the crumbled bacon and half of the chopped pickles. Stir until evenly distributed.
  7. Transfer to baking dish: Spoon the dip mixture into a prepared 8×8 or 9×9 baking dish and spread into an even layer. Top with remaining shredded cheddar and Monterey Jack cheese.
  8. Bake the dip: Place dish in preheated oven and bake for 15-20 minutes, until cheese is melted and bubbly and edges are just starting to brown. For a deeper golden top, switch to broil for the last 1-2 minutes, watching carefully.
  9. While the dip bakes, toast the baguette: Arrange baguette slices on a baking sheet. Brush both sides with olive oil or melted butter. Sprinkle with a pinch of salt and garlic powder. Bake for 8-10 minutes, flipping halfway, until golden and crispy.
  10. Finish and serve: Remove dip from oven. Top with remaining crumbled bacon, chopped pickles, diced tomato, and fresh parsley or chives. Serve immediately with toasted baguette slices.

Notes

For best texture, use block cream cheese (not spreadable) and let it come to room temperature. Thick-cut bacon holds its texture better. Leftover dip can be stored in an airtight container in the refrigerator for up to 3 days. Not recommended for freezing.
