  • 1 cup 100% Pure Pumpkin Puree
  • 2 large Eggs
  • 1/2 cup Milk (dairy or plant-based)
  • 3 tablespoons Real Maple Syrup
  • 2 tablespoons Vegetable Oil or Melted Coconut Oil
  • 1 teaspoon Cinnamon
  • 1/4 teaspoon Nutmeg
  • 1/4 teaspoon Ground Ginger
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  • Optional: Chopped walnuts, pecans, or dark chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Lightly grease a 12-cup muffin tin with oil or cooking spray, or line with silicone/paper liners.
  3. In a large mixing bowl, combine the rolled oats, baking powder, cinnamon, nutmeg, ginger, and salt. Whisk to distribute spices evenly.
  4. In a separate bowl, whisk together the eggs, milk, maple syrup, and vegetable oil until smooth.
  5. Pour the wet mixture into the dry ingredients. Stir gently until just combined, then add the pumpkin puree and stir until the batter is a uniform orange color.
  6. Divide the batter evenly among the 12 muffin cups, filling each about 3/4 full.
  7. Bake for 20-25 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  8. Let the cups cool in the tin on a wire rack for 10 minutes to firm up before removing.
  9. Store in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months.

Notes

Do not use instant oats or steel-cut oats as they affect the texture. Ensure you use pure pumpkin puree, not pumpkin pie filling. For vegan versions, substitute eggs with flax eggs. The cups firm up as they cool, so do not remove them from the tin immediately after baking.
