Ingredients

Scale
  • 1 ½ cups all-purpose flour (spooned and leveled)
  • ½ cup unsweetened cocoa powder (natural, not Dutch-process)
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • ¼ cup packed light brown sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup crushed chocolate sandwich cookies (about 8 Oreos, crushed into small pieces)
  • ½ cup milk or dark chocolate chips (for melting)
  • 1 tablespoon coconut oil or vegetable shortening
  • 24 thin pretzel sticks (broken in half to make 48 legs)
  • 48 small candy eyes

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat softened butter, granulated sugar, and brown sugar together until light and fluffy, about 2-3 minutes. Scrape down sides halfway through.
  4. Beat in egg and vanilla extract until fully combined. Do not overmix.
  5. Gradually add dry ingredients to wet mixture, mixing on low speed or stirring by hand until just combined. A few streaks of flour should remain.
  6. Gently fold in crushed chocolate sandwich cookies using a spatula. Do not overmix.
  7. Scoop rounded tablespoons of dough (about 1 ½ tablespoons each) onto prepared baking sheets, spacing 2 inches apart. Bake for 10-12 minutes. Cookies should look slightly puffed with set edges and soft centers.
  8. Let cookies cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  9. While cookies cool, break each pretzel stick in half to create 48 legs. Set aside.
  10. In a small microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 20-second intervals, stirring between each, until smooth and fully melted. Let cool for 2-3 minutes.
  11. Once cookies are completely cool, pipe a small dot of melted chocolate in the center of each cookie. Press four pretzel half-sticks on each side to create legs. Pipe a slightly larger chocolate circle in the center to cover pretzel ends. Press two candy eyes into the wet chocolate.
  12. Let chocolate set completely, about 15-20 minutes at room temperature, or refrigerate for 5 minutes to speed up.

Notes

Do not decorate warm cookies; let them cool completely. For best texture, store undecorated cookies separately and add legs and eyes the day of serving. The cookies taste even better the next day.
