This budget-friendly baked salmon with lemon dill butter is a quick and easy weeknight dinner that feels fancy without breaking the bank. Made with simple ingredients, it’s ready in under 30 minutes and perfect for feeding a family.

Ingredients

Scale
  • 4 salmon fillets (about 6 oz / 170g each)
  • 4 tablespoons unsalted butter (56g)
  • 2 tablespoons fresh lemon juice (about 1 large lemon)
  • 2 tablespoons fresh dill, chopped
  • 2 cloves garlic, minced
  • Salt and black pepper to taste
  • Optional: lemon slices and extra dill sprigs for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish with butter or cooking spray.
  2. If using frozen salmon, thaw completely. Pat the fillets dry with paper towels. Place them skin-side down in the prepared dish, leaving space between each. Season both sides generously with salt and black pepper.
  3. In a small microwave-safe bowl or saucepan, combine the butter, lemon juice, dill, and garlic. Microwave in 15-second bursts or melt over low heat until just melted, stirring occasionally.
  4. Pour the butter mixture evenly over the salmon fillets. Optionally, place a thin lemon slice on top of each fillet.
  5. Bake on the middle rack for 12-15 minutes, until the salmon flakes easily with a fork and the internal temperature reaches 145°F (63°C) at the thickest part.
  6. Remove from the oven and let rest for 2-3 minutes. Spoon pan juices over the fillets before serving. Garnish with extra dill sprigs and lemon wedges if desired.

Notes

For best results, use fresh lemon juice and fresh dill. If using dried dill, substitute 2 teaspoons for the fresh. To avoid overcooking, start checking at the 12-minute mark. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in a 300°F oven with a splash of water or broth.
