  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper, freshly ground
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika (smoked or sweet)
  • 1/2 teaspoon dried thyme (optional)
  • 1 tablespoon olive oil or avocado oil
  • Fresh parsley or chives, chopped for garnish (optional)
  • Lemon wedges for serving (optional)
  • Flaky sea salt for finishing (optional)

Instructions

  1. Remove the chicken thighs from the refrigerator about 15-20 minutes before cooking. Pat each thigh dry with paper towels, removing all moisture.
  2. In a small bowl, mix together the kosher salt, black pepper, garlic powder, onion powder, paprika, and dried thyme (if using). Sprinkle evenly over both sides of the chicken thighs.
  3. Drizzle the olive oil over the seasoned chicken and rub it in with your hands to lightly coat the surface.
  4. Preheat the air fryer to 400°F (200°C) for 3-5 minutes.
  5. Place the chicken thighs skin-side down in the air fryer basket in a single layer with space between each piece. Cook in batches if necessary.
  6. Cook at 400°F for 12 minutes without opening the basket.
  7. Using tongs, carefully flip each thigh over. Cook for another 8-10 minutes, until the internal temperature reaches 175-185°F (80-85°C) at the thickest part.
  8. Remove the chicken from the air fryer and let it rest on a cutting board or plate for 5 minutes.
  9. Garnish with fresh parsley or chives and a squeeze of lemon juice if desired. Sprinkle with flaky sea salt. Serve hot.

Pat the chicken very dry for crispy skin. Do not overcrowd the air fryer basket. Preheating is non-negotiable for best results. For boneless, skinless thighs, cook 12-15 minutes total. Leftovers can be stored in the refrigerator for up to 4 days and reheated in the air fryer at 375°F for 3-4 minutes.
