These individual custard cups capture everything wonderful about pumpkin pie—velvety texture, warm spice blend, deep autumn flavor—without any crust to fuss with. They’re simple enough for a weeknight but special enough for a dinner party.

  • 15 oz (425g) canned pumpkin puree (100% pumpkin, not pie filling)
  • 3 large eggs, room temperature
  • 14 oz (397g) sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon pumpkin pie spice (or homemade blend: 2 tsp cinnamon, 1 tsp ginger, ½ tsp nutmeg, ½ tsp allspice, ¼ tsp cloves)
  • ¼ teaspoon fine sea salt
  • For the topping (optional): 1 cup (240ml) heavy whipping cream, 2 tablespoons powdered sugar, ground cinnamon for dusting

Instructions

  1. Preheat oven to 350°F (175°C). Place 6 oven-safe ramekins (6 oz/180ml each) in a 9×13 baking dish.
  2. In a large mixing bowl, whisk eggs until light and frothy, about 30 seconds.
  3. Add pumpkin puree, sweetened condensed milk, vanilla extract, pumpkin pie spice, and salt. Whisk until smooth; do not overmix.
  4. Pour mixture through a fine-mesh strainer into a clean bowl or large measuring cup to remove any egg bits.
  5. Divide mixture evenly among the 6 ramekins, filling each about ¾ full.
  6. Carefully pour hot water into the baking dish until it reaches halfway up the sides of the ramekins (water bath).
  7. Bake for 35-40 minutes, until edges are set but centers still jiggle slightly when shaken.
  8. Carefully remove ramekins from water bath and place on a wire rack to cool for 30 minutes.
  9. Refrigerate for at least 2 hours before serving. Custards are best chilled.

Notes

Don’t skip the water bath—it ensures silky custards. Use room temperature ingredients for best results. Custards can be made up to 2 days in advance and stored covered in the refrigerator. For dairy-free, substitute sweetened condensed milk with full-fat coconut milk mixed with ½ cup maple syrup or honey (texture will be less creamy).
