These Almond Witch’s Finger Cookies are the perfect Halloween treat—buttery shortbread shaped like realistic fingers with whole almond nails. They’re quick, easy, and always a crowd-pleaser.

  • 1 cup (200g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract
  • 2 ½ cups (312g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 48 whole almonds, skin on
  • Red food coloring (gel or liquid)
  • Seedless raspberry jam (optional, for ‘blood’ effect)

Instructions

  1. Cream the butter and sugar together until light and fluffy, about 3 minutes.
  2. Beat in the egg, vanilla extract, and almond extract until combined.
  3. In a separate bowl, whisk together flour, baking powder, and salt.
  4. Gradually add dry ingredients to wet mixture, mixing on low until just combined.
  5. Wrap dough in plastic wrap and refrigerate for at least 30 minutes.
  6. Preheat oven to 325°F (163°C). Line baking sheets with parchment paper.
  7. Divide dough into 48 equal pieces. Roll each into a 3-inch log, tapering one end for the fingertip and flattening the other for the wrist.
  8. Use the back of a knife to press 2-3 knuckle lines into each finger.
  9. Press one whole almond onto the tapered end of each finger, pointed end outward.
  10. Use a toothpick to draw cuticle lines around the almond. Add a tiny dot of red food coloring mixed with water at the base of the almond.
  11. Bake at 325°F (163°C) for 12-15 minutes, until edges are just barely golden. Rotate sheets halfway through.
  12. Cool on baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
  13. Optional: Dab a tiny amount of seedless raspberry jam at the base of each almond before serving.

Chill the dough thoroughly to prevent spreading. Use whole almonds with skin on for realistic nails. For best results, shape fingers with your hands for natural imperfections. Cookies taste even better the next day.
