A fun, healthy Halloween snack that looks like a tiny pumpkin patch. Made with a bell pepper dip bowl and fresh veggies, it’s perfect for parties and getting kids to eat their vegetables.

Ingredients

Scale
  • 1 large orange bell pepper (squat and round, like a pumpkin shape)
  • 1 cup of your favorite dip (creamy ranch or Greek yogurt ranch recommended)
  • 1 large cucumber, sliced into rounds
  • 1 cup baby carrots
  • 1 cup cherry tomatoes
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1/2 cup snap peas or snow peas
  • 1 small celery stalk, cut into thin strips (for pumpkin stem)
  • A few chives or green onion tops (for pumpkin vines)
  • Fresh parsley or dill (for garnish)

Instructions

  1. Prepare the Pumpkin Dip Bowl: Wash and dry the orange bell pepper. Cut off the top quarter, set aside. Remove seeds and membranes, pat dry inside. Fill the hollowed pepper with dip, packing tightly. Place the top back on at a slight angle. Insert a small celery stick or broccoli stem into the top for the stem.
  2. Build the Veggie Base: Arrange cucumber slices in a single layer on a serving platter, overlapping slightly to create a green field.
  3. Place the Pumpkin: Set the filled bell pepper pumpkin in the center of the cucumber field, pressing gently to secure.
  4. Create the Veggie Patch: Arrange other veggies around the pumpkin in small clusters: baby carrots in a pile, cherry tomatoes in a cluster, broccoli florets around edges, snap peas scattered, cauliflower florets in one corner.
  5. Add the Garnishes: Use chives or green onion tops to create vines trailing from the pumpkin. Tuck parsley or dill sprigs here and there.
  6. Final Check: Step back and adjust any veggies. Ensure dip is accessible. Serve immediately or cover loosely with plastic wrap and refrigerate for up to 2 hours.

Notes

Choose a squat, round bell pepper for best pumpkin shape. Keep dip thick to prevent leaking. Prep veggies a day ahead and store in cold water for crispness. Balance colors with bright orange, red, and white veggies. Can be made vegan with plant-based dip.
