Ingredients

Scale
  • 3 pounds sweet potatoes (about 4 medium-large), scrubbed clean
  • 1/4 cup unsalted butter, melted
  • 1/3 cup packed light brown sugar
  • 2 large eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup milk (whole milk preferred)
  • 1 cup pecan halves or pieces, roughly chopped
  • 1/4 cup all-purpose flour
  • 1/4 cup packed light brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 3 tablespoons cold unsalted butter, cut into small cubes

Instructions

  1. Preheat oven to 400°F (200°C). Wash and scrub sweet potatoes, poke each with a fork, and roast on a baking sheet for 45-60 minutes until very soft. Let cool for 15 minutes.
  2. While sweet potatoes roast, make the streusel: In a medium bowl, combine flour, brown sugar, cinnamon, and salt. Add cold butter cubes and work into dry ingredients using a pastry cutter or fingertips until mixture resembles coarse crumbs with pea-sized butter pieces. Stir in chopped pecans. Refrigerate until ready to use.
  3. Once sweet potatoes are cool enough to handle, peel off skins and place flesh in a large mixing bowl. Add melted butter, brown sugar, beaten eggs, vanilla, cinnamon, nutmeg, and salt. Mash until smooth with a few small lumps. Stir in milk until well combined.
  4. Reduce oven temperature to 350°F (175°C). Grease a 9×13-inch baking dish. Spread sweet potato mixture evenly in the dish. Sprinkle cold pecan streusel over the top.
  5. Bake for 25-30 minutes until filling is set around edges and streusel is golden brown and fragrant. Let rest for 5-10 minutes before serving.

Notes

Roast sweet potatoes instead of boiling for deeper flavor. Keep streusel cold for crunchiest texture. Let casserole rest after baking for cleaner slices. For dairy-free, use dairy-free butter and oat milk. For gluten-free, use a 1:1 gluten-free flour blend. Can be assembled up to 2 days ahead (without streusel) and refrigerated; add streusel before baking and add 10 extra minutes. Freezes well for up to 3 months.
