White Chicken Chili Crockpot Recipe Easy Homemade Corn Lime Chili

  • 2 lbs boneless, skinless chicken breasts
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (15 oz) white beans, partially blended
  • 1 can (15 oz) creamed corn
  • 2 cups low-sodium chicken broth
  • 12 cans (4 oz each) diced green chilies
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika (optional)
  • Salt and freshly ground black pepper, to taste
  • Juice of 2 limes
  • Fresh cilantro, chopped
  • Optional toppings: shredded Monterey Jack cheese, sour cream, sliced jalapeños, avocado

Instructions

  1. Pat 2 lbs of chicken breasts dry and season lightly with salt and pepper.
  2. Optional: Heat a tablespoon of oil in a skillet over medium heat. Brown the chicken for 2-3 minutes per side until lightly golden but not cooked through. Transfer chicken to the crockpot.
  3. Dice 1 medium yellow onion and mince 3 garlic cloves. Add both to the crockpot along with 1-2 cans diced green chilies.
  4. Drain and rinse two 15 oz cans of white beans. Pour one can whole into the crockpot. Purée the other can in a blender or with an immersion blender until smooth, then add it for creaminess. Add one 15 oz can of creamed corn.
  5. Pour in 2 cups chicken broth. Stir in 1 tsp cumin, 1 tsp oregano, 1/2 tsp smoked paprika (optional), and salt and pepper to taste.
  6. Cover and cook on low for 6-7 hours or high for 3-4 hours until chicken is tender.
  7. About 30 minutes before serving, shred the chicken directly in the crockpot using two forks. Stir to combine.
  8. Just before serving, squeeze the juice of 2 fresh limes into the chili and stir in chopped cilantro. Adjust seasoning if needed.

Notes

Purée only part of the beans to keep a creamy yet chunky texture. Don’t skip the lime juice at the end for brightness. If chili is too thick, add more broth or water. Browning chicken is optional but adds flavor. For dairy-free, omit cheese and sour cream or use coconut yogurt. Use thawed chicken for even cooking if frozen.
