  • 3 large ripe bananas, mashed
  • 2 cups (240g) all-purpose flour, sifted
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon (optional)
  • ½ cup (113g) unsalted butter, melted and cooled
  • ¾ cup (150g) packed brown sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • ¼ cup (60ml) freshly brewed espresso, cooled

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan with butter or line it with parchment paper.
  2. In a medium bowl, whisk together the sifted flour, baking soda, salt, and ground cinnamon if using. Set aside.
  3. In a large bowl, mash the ripe bananas with a fork until mostly smooth but still a bit chunky.
  4. Add melted butter, brown sugar, eggs, and vanilla extract to the bananas. Beat together until fully combined and creamy, about 2-3 minutes.
  5. Gently fold the dry ingredients into the wet ingredients until just combined. Do not overmix.
  6. Brew the espresso and let it cool completely.
  7. Pour half of the banana bread batter into the prepared loaf pan. Drizzle half of the espresso over the batter and use a butter knife or skewer to swirl it, creating a marbled effect.
  8. Add the remaining batter on top and repeat with the rest of the espresso, swirling again.
  9. Bake for 55-65 minutes, starting to check at 55 minutes by inserting a toothpick into the center. It is done when the toothpick comes out clean or with a few moist crumbs.
  10. Remove from oven and let cool in the pan for 15 minutes before transferring to a wire rack to cool completely.

Notes

Use very ripe bananas for best sweetness and flavor. Do not overmix the batter to keep the bread tender. Ensure espresso is cooled before swirling to maintain the marbled effect. Start checking doneness at 55 minutes to avoid overbaking. Grease the pan well to prevent sticking.
