A stress-free, elegant party appetizer that combines the comfort of nachos with the presentation of a charcuterie board. This recipe features sturdy chips, melted cheeses, seasoned meats, and fresh dips, designed to stay crisp and delicious.

Ingredients

  • Restaurant-style tortilla chips
  • Kettle-cooked potato chips
  • Plantain chips
  • Sharp cheddar cheese (grated fresh)
  • Pepper Jack cheese (grated fresh)
  • Queso Fresco or Cotija cheese (crumbled)
  • Refried beans
  • Ground beef or ground turkey
  • Chorizo (crumbled and cooked)
  • Black beans (rinsed and drained)
  • Pico de gallo (diced tomatoes, onions, cilantro, lime juice)
  • Sliced jalapeños (fresh or pickled)
  • Guacamole (avocados, lime, salt)
  • Sour cream
  • Sliced black olives
  • Cumin
  • Chili powder
  • Salt and pepper

Instructions

  1. Grate the sharp cheddar and Pepper Jack cheese using a box grater. Crumble the Queso Fresco or Cotija into a separate bowl.
  2. In a skillet over medium heat, cook the ground beef or turkey with the chorizo. Season with cumin, chili powder, salt, and pepper until browned. Drain excess grease.
  3. In a separate saucepan, warm the refried beans. Add a splash of water or milk if needed to reach a spreadable consistency.
  4. Prepare fresh toppings: chop cilantro, dice tomatoes for pico de gallo, and slice jalapeños and olives. Mix pico de gallo ingredients and let sit. Mash avocados for guacamole.
  5. Place the large board on the table. Pile tortilla chips in the center or along one side. Scatter potato chips and plantain chips around the edges.
  6. Place small bowls of dips (guacamole, sour cream, pico) around the board. Spread the refried beans in a line or pool on the board.
  7. Spoon the ground meat mixture next to the beans. Sprinkle the grated cheddar and Pepper Jack generously over the warm beans and meat to allow slight melting.
  8. Sprinkle the crumbled Queso Fresco over the top for a fresh finish.
  9. Garnish with fresh cilantro leaves. Arrange sliced jalapeños and olives in clusters. Serve immediately.

Notes

Do not use pre-shredded cheese as it contains anti-caking agents that prevent smooth melting. Keep wet ingredients like pico de gallo and guacamole in separate bowls until serving to maintain chip crunch. Assemble the board no more than an hour before serving to prevent sogginess. Leftovers can be stored in the refrigerator for up to 2 days and reheated in the oven at 350°F.
