  • 1/4 cup baking soda
  • 4 cups water
  • 1 large egg, beaten
  • Coarse sea salt or pretzel salt
  • 2 tablespoons melted butter
  • Ranch dressing or blue cheese dressing (for dipping)
  • Celery sticks (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Make the buffalo chicken filling: In a large mixing bowl, combine the softened cream cheese, shredded chicken, buffalo hot sauce, shredded cheddar, crumbled blue cheese (if using), ranch dressing, garlic powder, and onion powder. Mix until well combined and creamy. Taste and adjust salt and pepper.
  3. Prepare the baking soda bath: In a medium saucepan, bring 4 cups of water to a boil. Carefully add the baking soda (it will fizz vigorously), stir until dissolved, then reduce heat to a gentle simmer.

  6. Blanch the pretzel bites: Working in batches of 4-5, carefully drop the dough balls into the simmering baking soda water. Cook for 30 seconds, flip, and cook another 30 seconds. Remove with a slotted spoon and place on the prepared baking sheet, spacing about 2 inches apart.
