  • 2 large eggs, room temperature
  • ½ cup (120g) plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 2 teaspoons fresh lemon zest
  • 1 cup (150g) fresh or frozen huckleberries
  • Optional: coarse sugar for sprinkling on top

Instructions

  1. Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and granulated sugar.
  3. In a separate bowl, beat the eggs until light, then stir in the melted butter, Greek yogurt, vanilla extract, and lemon zest.
  4. Pour the wet ingredients into the dry ingredients and gently fold until just combined, avoiding overmixing.
  5. Gently fold in the huckleberries to keep them whole.
  6. Spoon the batter evenly into the muffin cups, filling about ¾ full. Sprinkle coarse sugar on top if desired.
  7. Bake for 18-22 minutes until muffins are golden and a toothpick inserted in the center comes out clean or with a few moist crumbs.
  8. Let muffins rest in the tin for 5 minutes, then transfer to a cooling rack to cool completely.
