  • 1 medium lime, juiced
  • 1/2 cup finely diced red onion
  • 1 jalapeño, seeded and minced

  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 can (6 oz) sliced black olives
  • 1 carrot, peeled and cut into thin strips
  • 1 small piece of red bell pepper
  • 1 tortilla chip (optional)

Instructions

  1. Prep your avocados (2 minutes): Cut each avocado in half lengthwise around the pit. Twist the halves apart and remove the pit by gently tapping it with your knife blade and twisting. Scoop the flesh into your mixing bowl. Discard the skins and pits.
  2. Mash to your preference (2 minutes): Using a fork, mash the avocado to your desired consistency. I like to leave some chunks—about the size of peas—for texture. If you prefer smoother guacamole, keep mashing until it’s creamy. Don’t overwork it, though. Over-mashed avocado can get gummy.
  3. Add the lime juice (30 seconds): Squeeze the lime juice over the mashed avocado and stir immediately. The acid not only adds flavor but also helps prevent browning.
  4. Mix in the aromatics (3 minutes): Add the diced red onion, minced jalapeño, chopped cilantro, and diced tomato. Stir gently to combine. You want everything evenly distributed without smashing the avocado further. I use a folding motion—like I’m folding in whipped cream.
  5. Season to perfection (1 minute): Sprinkle in the salt, black pepper, and garlic powder. Taste and adjust. This is where you make it yours.
  6. Taste test (30 seconds): Grab a chip and taste your guacamole. Does it need more lime? More salt? A little extra heat? Adjust now before you start decorating.
  7. Shape the monster (2 minutes): Transfer the guacamole to your serving platter or shallow bowl. Using a spatula or the back of a spoon, shape it into an oval or rectangle—like Frankenstein’s head. Make it about 1 inch thick so the decorations stay put. Smooth the top and sides as best you can.
  8. Create the hair (3 minutes): Take your sliced black olives and arrange them along the top of the guacamole head to create Frankenstein’s iconic flat-top hair.   9. Add the eyes and scars (2 minutes): Place two olive slices for eyes. For a truly spooky look, position them slightly uneven—Frankenstein wasn’t symmetrical. Create a small scar on the forehead using a thin strip of red bell pepper or a small piece of tortilla chip.
  10. Make the mouth (2 minutes): Use small pieces of black olive or a thin strip of red bell pepper to create a stitched or stern-looking mouth. I like to make a few short, straight lines that look like stitches.
  11. Attach the bolts (1 minute): Insert the carrot strips into the sides of the guacamole head, about halfway down. These are Frankenstein’s neck bolts. Make sure they’re visible and sticking out slightly.
  12. Final touches (1 minute): Look at your creation from all angles. Adjust any olives or decorations that look off. Surround the monster with tortilla chips for serving.
