Tender, slow-cooked Italian beef served on soft slider rolls with melted provolone cheese and sautéed onions. This easy, crowd-pleasing recipe is perfect for parties, potlucks, or busy weeknights.

  • 34 lbs beef chuck roast
  • 1 cup beef broth (low-sodium)
  • 2 tbsp Italian seasoning
  • 810 slices provolone cheese
  • 1218 small slider rolls (Hawaiian or soft dinner rolls)
  • 2 medium sweet onions, sliced thinly
  • 4 cloves garlic, minced
  • 2 tbsp butter, melted
  • Salt and pepper to taste
  • 1 tbsp oil (for sautéing)
  • Horseradish sauce (optional, for serving)

Instructions

  1. Pat the beef chuck roast dry and trim large chunks of hard fat. Season generously with salt and pepper on all sides.
  2. Heat oil in a large skillet over medium heat. Sauté sliced onions and minced garlic for 5-7 minutes until soft and translucent. Remove from heat.
  3. Pour beef broth into the bottom of a 6-quart slow cooker. Stir in Italian seasoning.
  4. Place the beef roast on top of the onions and broth in the slow cooker. Pour the sautéed onion and garlic mixture over the beef.
  5. Cover and cook on low for 8 hours or on high for 4-5 hours, until the beef is fork-tender and easily shreds.
  6. Remove beef from the slow cooker and shred using two forks or meat claws. Discard large fat pieces. Reserve about 1/2 cup of cooking juices.
  7. Slice slider rolls in half horizontally. Place the bottom halves into the slow cooker on top of the shredded beef.
  8. Spoon the shredded beef and onions over the bread. Top with provolone cheese slices.
  9. Cover and let sit on the ‘warm’ setting for 10-15 minutes to melt the cheese and warm the bread. Alternatively, transfer to a baking dish and broil for 2-3 minutes.
  10. Brush the tops of the slider rolls with melted butter. If not already toasted, broil for 1-2 minutes until golden brown.
  11. Separate sliders and serve warm with horseradish sauce on the side.

Notes

For best results, use a chuck roast with good marbling for tenderness. Do not use lean cuts like sirloin. If using gluten-free rolls, ensure they are sturdy enough to hold the filling. Leftover cooking liquid can be frozen for use in soups or stews.
