  • 12 fresh figs (Black Mission or Brown Turkey), ripe but firm
  • 6 thin slices prosciutto, cut in half lengthwise
  • 4 ounces soft fresh goat cheese, at room temperature
  • 2 tablespoons honey, divided
  • 1 tablespoon fresh thyme leaves, plus extra for garnish
  • 1 tablespoon balsamic glaze (optional)
  • Flaky sea salt, to taste
  • Freshly cracked black pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, combine the softened goat cheese with 1 tablespoon honey, 1 teaspoon fresh thyme leaves, and a pinch of black pepper. Mix until smooth and creamy.
  3. Gently wash the figs and pat them completely dry. Using a sharp paring knife, cut a deep ‘X’ into the top of each fig, cutting about three-quarters of the way down without cutting all the way through.
  4. Using a small spoon or your fingers, carefully stuff about 1 teaspoon of the goat cheese mixture into the center of each fig. Gently press the fig back together around the filling.
  5. Wrap one prosciutto strip around each stuffed fig, covering the opening to hold the cheese in. Place each wrapped fig seam-side down on the prepared baking sheet, spacing them about 1 inch apart.
  6. Bake for 12-15 minutes, until the prosciutto is crispy and browned around the edges and the figs are soft and slightly caramelized.
  7. Remove from the oven and let cool on the baking sheet for 2-3 minutes. Transfer to a serving platter using tongs. Drizzle with the remaining 1 tablespoon honey and the balsamic glaze if using. Sprinkle with fresh thyme leaves, a tiny pinch of flaky sea salt, and freshly cracked black pepper.
  8. Serve immediately while warm.

For best results, let goat cheese come to room temperature before mixing. Watch the oven closely as prosciutto can burn quickly. Prep ahead by stuffing and wrapping figs up to 4 hours in advance; keep refrigerated until ready to bake. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days; reheat in a 350°F oven for 5-7 minutes.
