Quick and easy grilled shrimp skewers marinated in a rich garlic butter sauce, perfect for BBQs and weeknight dinners. Juicy, flavorful, and crowd-pleasing with a lightly charred finish.

  • 1 pound (450g) large shrimp, peeled and deveined (fresh or thawed frozen shrimp)
  • 4 tablespoons unsalted butter, melted
  • 4 garlic cloves, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon smoked paprika (optional)
  • 1 tablespoon fresh parsley, chopped
  • Salt and freshly ground black pepper, to taste
  • Wooden or metal skewers (if wooden, soak in water for 30 minutes beforehand)

Instructions

  1. Rinse the peeled and deveined shrimp under cold water, then pat dry thoroughly with paper towels.
  2. In a mixing bowl, combine the melted butter, minced garlic, fresh lemon juice, smoked paprika (if using), chopped parsley, salt, and black pepper. Stir well to blend all the flavors.
  3. Add the shrimp to the bowl and toss gently until each piece is well coated. Let it sit for about 10 minutes to soak up the flavors.
  4. Skewer 4-5 shrimp per stick, piercing through the tail and the thickest part to keep them secure. Avoid overcrowding for even grilling.
  5. Preheat the grill to medium-high heat (about 400°F/200°C). Lightly oil the grates to prevent sticking.
  6. Place the skewers on the grill and cook for 2-3 minutes per side, brushing with extra garlic butter halfway through. Shrimp are done when pink and opaque with slight char marks.
  7. Remove from the grill and serve immediately with a final squeeze of lemon juice and optional extra parsley garnish.

Notes

If using wooden skewers, soak them in water for 30 minutes before grilling to prevent burning. Do not marinate shrimp longer than 30 minutes to avoid mushy texture. Brush with garlic butter during grilling but avoid burning the garlic by adjusting heat if necessary. Shrimp cook quickly; flip only once to keep them juicy. If no grill is available, a grill pan or broiler can be used as alternatives.
