Instructions

  1. Brown the butter: Place the butter in a medium skillet over medium heat. Stir frequently as it melts and foams, then begins to brown and smell nutty. Once browned, pour into a heatproof bowl and let cool for about 5 minutes.
  2. Prepare the zucchini: Grate the zucchini using the coarse side of a box grater. Place the shredded zucchini in a clean kitchen towel and squeeze out as much moisture as possible.
  3. Mix wet ingredients: In a large bowl, whisk together the browned butter and sugar until combined. Add eggs one at a time, whisking thoroughly after each addition. Stir in vanilla extract.
  4. Sift dry ingredients: In a separate bowl, sift together the flour, cocoa powder, baking soda, baking powder, and sea salt.
  5. Combine mixtures: Gradually add the dry ingredients to the wet, stirring gently with a wooden spoon or spatula. Avoid overmixing; stop when a few streaks of flour remain.
