A quick and easy beef and broccoli stir fry recipe that is better than takeout, featuring tender beef strips and crisp broccoli coated in a savory sauce.

  • 1 tablespoon soy sauce
  • 1 teaspoon cornstarch
  • 1 teaspoon sesame oil
  • 1/2 teaspoon freshly ground black pepper
  • 2 cups broccoli florets
  • 2 tablespoons vegetable oil
  • 3 garlic cloves, minced
  • 1 teaspoon freshly grated ginger
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon water
  • 1 tablespoon brown sugar
  • 1 teaspoon cornstarch

Instructions

  1. Slice the flank steak thinly against the grain into strips about 1/4-inch thick.
  2. In a bowl, combine the sliced beef with 1 tablespoon soy sauce, 1 teaspoon cornstarch, 1 teaspoon sesame oil, and black pepper. Toss well to coat evenly and marinate for 15-20 minutes.
  3. Wash and cut broccoli into bite-sized florets. If using frozen, thaw and drain well.
  4. In a small bowl, whisk together soy sauce, oyster sauce, water, brown sugar, and cornstarch. Set aside.
  5. Heat 1 tablespoon vegetable oil over medium-high heat in a wok or skillet. Add broccoli and stir-fry for 3-4 minutes until bright green and crisp-tender. Remove broccoli and set aside.
  6. Add remaining 1 tablespoon oil to the pan and heat until shimmering. Add marinated beef in a single layer and sear untouched for about 1 minute, then stir-fry for 1-2 minutes until mostly cooked but still juicy.
  7. Push beef to the side, add minced garlic and grated ginger to the pan, and stir quickly for 30 seconds until fragrant.
  8. Return broccoli to the pan. Pour in the sauce mixture and toss everything together over medium heat for 1-2 minutes until sauce thickens and coats beef and broccoli evenly.
  9. Serve immediately over steamed rice or noodles. Adjust seasoning if needed.

Notes

Marinate beef for 15-20 minutes to keep it tender but avoid over-marinating to prevent mushiness. Use high heat and cook in batches to avoid steaming. Thaw and drain frozen broccoli to prevent watery sauce. Slice beef thinly against the grain, preferably while slightly frozen. Add a splash of water if sauce is too thick.
