  • 8 regular-sized beef or pork hot dogs
  • 8 slices thick-cut bacon
  • 2 large yellow onions, thinly sliced
  • 2 tablespoons unsalted butter
  • ½ cup crumbled blue cheese
  • 8 soft hot dog buns, lightly toasted
  • 1 tablespoon olive oil (optional)
  • Salt and pepper to taste
  • Fresh parsley or chives, roughly chopped (optional garnish)

Instructions

  1. Slice 2 large yellow onions thinly. Heat 2 tablespoons unsalted butter in a large skillet over medium-low heat. Add onions and a pinch of salt. Cook slowly, stirring occasionally, for about 25-30 minutes until onions are soft, golden, and caramelized. Add a splash of water or olive oil if onions start sticking.
  2. Wrap each of the 8 hot dogs tightly with a slice of thick-cut bacon, overlapping slightly to cover the surface. Secure with toothpicks if needed.
  3. Preheat grill or grill pan to medium heat. Place bacon-wrapped hot dogs on the grill and cook for 12-15 minutes, turning every 3-4 minutes to crisp all sides evenly. Bacon should be golden and slightly crispy, hot dog inside juicy. Alternatively, cook covered in a skillet on medium heat, turning often.
  4. Lightly toast 8 buns on the grill or in a toaster oven until warm and slightly crispy on edges.
  5. Remove toothpicks from hot dogs. Place each in a toasted bun. Spoon a generous amount of caramelized onions over the top, then sprinkle with ½ cup crumbled blue cheese. Add freshly ground black pepper and a pinch of salt to taste.
  6. Garnish with chopped fresh parsley or chives if desired. Serve immediately so blue cheese melts slightly from hot onions and bacon.

Notes

If bacon isn’t crisping enough on the grill, finish under a broiler for 1-2 minutes watching carefully. Avoid overcrowding the pan when caramelizing onions. Let hot dogs rest a minute or two after cooking before assembling to keep buns from getting soggy. For gluten-free, swap buns for gluten-free varieties. Vegetarian options include plant-based hot dogs and tempeh bacon with vegan cheese.
