A quick and easy rustic mixed berry galette featuring a flaky buttery crust, juicy mixed berries, and a sweet honey drizzle, perfect for casual or special occasions.

  • 1/2 cup (113g) unsalted butter, chilled and cubed
  • 1 tablespoon granulated sugar (for crust)
  • 1/4 teaspoon salt
  • 34 tablespoons ice water
  • 3 cups (~450g) mixed berries (blueberries, raspberries, blackberries, strawberries), fresh or frozen
  • 1/3 cup (65g) granulated sugar (for filling)
  • 1 tablespoon cornstarch
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract (optional)
  • 1 large egg, beaten (for brushing crust)
  • 1 tablespoon coarse sugar (for sprinkling on crust)
  • 2 tablespoons honey (for drizzling after baking)

Instructions

  1. In a large bowl, combine flour, 1 tablespoon sugar, and salt. Add chilled, cubed butter and cut into flour until mixture resembles coarse crumbs with pea-sized pieces.
  2. Add 3 tablespoons ice water and mix gently until dough just comes together; add remaining tablespoon if needed. Shape into a disk, wrap in plastic, and chill for at least 30 minutes.
  3. Toss mixed berries with 1/3 cup sugar, cornstarch, lemon juice, and vanilla extract. Let sit at room temperature for 10 minutes.
  4. Roll dough on a lightly floured surface into a 12-inch circle about 1/8-inch thick. Transfer to parchment-lined baking sheet.
  5. Spoon berry filling into center of dough, leaving a 2-inch border. Fold edges over filling in pleats, overlapping as needed, leaving center open.
  6. Brush dough edges with beaten egg and sprinkle with coarse sugar.
  7. Bake at 400°F (200°C) for 35-40 minutes until crust is golden and filling bubbles. Tent with foil if crust browns too quickly.
  8. Cool for 10 minutes, then drizzle honey over warm berries.
  9. Let cool another 15 minutes before slicing. Serve warm or at room temperature, optionally with vanilla ice cream or whipped cream.

Notes

Keep butter cold to ensure flaky crust. Chill dough well to prevent shrinkage. Adjust sugar based on berry sweetness. Use cornstarch to prevent soggy filling. Drizzle honey after baking to preserve floral notes. Frozen berries should be thawed and drained to avoid sogginess. Dough can be made ahead and chilled or frozen.
