A unique and refreshing summer drink combining the tartness of fresh lemonade with the tangy twist of dill pickle juice. Perfect for July 4th celebrations and hot summer days.

  • 45 medium fresh lemons, freshly squeezed (about 1 cup or 240 ml lemon juice)
  • ½ cup (120 ml) dill pickle juice
  • ¾ cup (150 g) granulated sugar (can substitute honey or agave)
  • 4 cups (1 liter) cold water
  • Ice cubes, for serving
  • Fresh dill sprigs or lemon slices (optional, for garnish)
  • Splash of club soda or sparkling water (optional, for fizz)

Instructions

  1. Roll each lemon on the counter to loosen the juice, then cut in half and extract juice using a citrus juicer or reamer. Remove seeds. (5 minutes)
  2. Make simple syrup by combining granulated sugar with 1 cup (240 ml) water in a small saucepan. Heat over medium, stirring constantly until sugar dissolves. Remove from heat and cool to room temperature. (7-10 minutes)
  3. In a large pitcher, combine the cooled simple syrup, fresh lemon juice, and remaining 3 cups (720 ml) cold water. Stir gently but thoroughly. (2 minutes)
  4. Add ½ cup (120 ml) dill pickle juice to the pitcher and stir gently. (1 minute)
  5. Add plenty of ice cubes to the pitcher or glasses. Garnish with lemon slices or fresh dill if desired. Add a splash of sparkling water to individual glasses just before serving if you want fizz. (5 minutes)
  6. Taste and adjust sweetness or tartness by adding more water or simple syrup as needed. (2 minutes)

Notes

Use fresh lemon juice for best flavor. Chill the pitcher before mixing to keep lemonade cold longer. Add pickle juice last and stir well after adding ice to avoid dilution. For fizz, add sparkling water just before serving. Store leftovers refrigerated up to 3 days and stir before serving. Avoid boiling simple syrup with lemon juice to preserve brightness.
