Refreshing Frozen Watermelon Margarita Popsicles

These frozen watermelon margarita popsicles are a quick, easy, and refreshing summer treat combining juicy watermelon, tequila, lime, and a hint of sweetness with a salted rim for a festive twist.

Ingredients

  • 4 cups watermelon, cubed and seeds removed
  • 1/2 cup tequila blanco
  • 1/4 cup fresh lime juice (about 2 large limes)
  • 2 tablespoons agave nectar or honey
  • 2 tablespoons triple sec or orange liqueur (optional)
  • Pinch of salt for rims of popsicle molds
  • 1/4 cup water

Instructions

  1. Cube about 4 cups (600g) of ripe watermelon, removing as many seeds as possible.
  2. Add watermelon cubes, 1/2 cup tequila, 1/4 cup fresh lime juice, 2 tablespoons agave nectar, 2 tablespoons triple sec, and 1/4 cup water into a high-speed blender. Blend until completely smooth, about 1 minute.
  3. Pour a small amount of salt into a shallow bowl. Dip the rim of each popsicle mold briefly into water, then into the salt to create a thin salted rim.
  4. Carefully pour the blended mixture into each mold, leaving a little headspace for expansion when freezing. Insert sticks.
  5. Place molds in the freezer for at least 6 hours or preferably overnight until fully solid.
  6. To unmold, run warm water on the outside of the mold for 10-15 seconds to loosen the popsicles. Serve immediately.

Notes

Use a high-speed blender for a silky smooth texture. Salt the rims lightly to mimic a margarita glass experience. Adjust sweetness to taste as watermelon sweetness varies. For a non-alcoholic version, omit tequila and triple sec and add sparkling water with extra lime juice. Run warm water on molds briefly to ease unmolding.
