A quick and easy frozen treat combining fresh strawberries, tequila, lime, and a touch of sweetness, perfect for cooling off on hot summer days.

  • 2 cups fresh strawberries, hulled and sliced (or frozen, thawed slightly)
  • 1/2 cup (120 ml) tequila blanco
  • 1/4 cup (60 ml) fresh lime juice
  • 1/4 cup (60 ml) simple syrup (homemade or store-bought)
  • 1/2 cup (120 ml) cold water
  • Pinch of sea salt
  • Optional: 1 teaspoon lime zest
  • Optional: 2 tablespoons (30 ml) triple sec or orange liqueur

Instructions

  1. Prepare the strawberries by washing, hulling, and slicing them. If using frozen, thaw slightly.
  2. Make simple syrup if using homemade: combine equal parts sugar and water in a small saucepan, heat gently until sugar dissolves, then cool.
  3. In a blender or food processor, combine strawberries, tequila blanco, fresh lime juice, simple syrup, cold water, and a pinch of sea salt. Add lime zest and triple sec if using.
  4. Blend until smooth but still slightly textured, like a thick smoothie.
  5. Taste and adjust sweetness or lime juice as needed.
  6. Pour the mixture into popsicle molds, leaving a little room at the top for expansion. Insert sticks and place molds on a tray to keep steady.
  7. Freeze for at least 4 hours or overnight for best firmness.
  8. To unmold, briefly run warm water over the outside of the molds and gently pull the sticks to release the popsicles.
  9. Enjoy immediately or store in an airtight container in the freezer for up to 2 weeks.

Notes

Alcohol content can slow freezing; reduce tequila slightly if needed or freeze longer. Shake mixture halfway through freezing if possible for smoother texture. For non-alcoholic version, replace tequila and triple sec with extra cold water or sparkling water. Adding a pinch of sea salt enhances flavor. Taste mixture before freezing to adjust sweetness and tartness.
