  • 1 cup (240 ml) raw or wildflower honey
  • 3 tablespoons (about 30 grams) unflavored gelatin powder
  • 1 ½ cups (360 ml) water, divided
  • 1 tablespoon (15 ml) fresh lemon juice
  • Pinch of salt (optional)

Instructions

  1. Pour 1 cup (240 ml) of cold water into a mixing bowl. Sprinkle 3 tablespoons (30 g) of unflavored gelatin evenly over the surface. Let it sit for 5 to 10 minutes until the gelatin absorbs the water and becomes spongy.
  2. In a separate small saucepan, gently warm ½ cup (120 ml) of water (not boiling, just hot to the touch). Remove from heat and stir in 1 cup (240 ml) of honey until fully dissolved. Add 1 tablespoon (15 ml) fresh lemon juice and a pinch of salt.
  3. Slowly pour the warm honey mixture into the bloomed gelatin, whisking constantly until the gelatin completely dissolves and the mixture is smooth and glossy. If clumps appear, whisk over low heat briefly without boiling.
  4. Immediately pour the mixture into silicone molds or small cups, filling about three-quarters full.
  5. Place the molds in the freezer for 3 to 4 hours, or until the jelly is firm but still slightly wobbly to the touch.
  6. When ready, gently loosen the edges with a thin knife or dip the mold briefly in warm water to release. Serve immediately chilled.

Notes

Bloom gelatin properly to avoid lumps. Warm honey mixture gently, keeping temperature under 140°F (60°C) to preserve gelatin’s setting ability. For vegan version, substitute gelatin with 1 tablespoon agar-agar powder and heat longer to dissolve. Unmold jelly by dipping molds briefly in warm water. Store leftovers covered in freezer up to 3 days. Avoid microwaving to reheat.
