These quick and easy pumpkin pie spice sugar cookies come together in one bowl with no chilling required. They are soft, chewy, and topped with a simple vanilla icing, making them the perfect weeknight dessert.

  • ¾ cup (150g) granulated sugar
  • ¼ cup (50g) light brown sugar, packed
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • 1½ cups (190g) all-purpose flour
  • 1½ teaspoons pumpkin pie spice
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup (120g) powdered sugar
  • 23 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a large mixing bowl, whisk together melted butter, granulated sugar, and brown sugar until well combined and looks like wet sand.
  3. Add egg and vanilla extract; whisk vigorously for about 30 seconds until smooth, glossy, and slightly thickened.
  4. Sprinkle flour, pumpkin pie spice, baking soda, and salt over the wet mixture. Stir with a wooden spoon or spatula just until no streaks of flour remain. Do not overmix.
  5. Using a cookie scoop (1.5 tablespoon size), portion dough into balls and place on prepared baking sheet, spacing about 2 inches apart.
  6. Bake for 9 to 11 minutes, until edges are set and lightly golden but centers still look soft and puffy.
  7. Let cookies rest on baking sheet for 5 minutes, then transfer to a wire cooling rack to cool completely.
  8. While cookies cool, make icing: In a small bowl, whisk together powdered sugar, 2 tablespoons milk, and ½ teaspoon vanilla extract. Add remaining milk if needed to reach a drizzle-able consistency.
  9. Once cookies are completely cool, drizzle icing over them in a zigzag pattern. Let icing set for about 10 minutes before serving.

Notes

For best results, do not overbake. Cookies will continue to set on the hot baking sheet. If dough is too sticky, chill for 15 minutes. For a sparkly top without icing, roll dough balls in a mixture of 2 tablespoons granulated sugar and 1 teaspoon pumpkin pie spice before baking.
