  • 1 tablespoon chia seeds (optional)
  • 2 tablespoons creamy peanut butter (natural, no added sugar)
  • 1 scoop vanilla or chocolate protein powder (about 30 grams)
  • 1 tablespoon maple syrup or honey
  • 1/4 teaspoon vanilla extract (optional)
  • Optional toppings: 1 tablespoon chopped peanuts, 1/2 banana sliced, extra peanut butter drizzle, pinch of flaky sea salt

Instructions

  1. In a mason jar or container, combine rolled oats, chia seeds (if using), and protein powder. Stir to break up any clumps.
  2. Add milk, Greek yogurt, peanut butter, maple syrup (or honey), and vanilla extract.
  3. Stir vigorously for 30-45 seconds, scraping the bottom and corners, until protein powder is fully dissolved and peanut butter is evenly distributed.
  4. Adjust consistency: if too thick, add another tablespoon of milk; if too thin, add a few more oats or 1/2 tablespoon chia seeds.
  5. Seal the jar and refrigerate for at least 6 hours, preferably overnight.
  6. In the morning, stir well. If too thick, add a splash of milk. Top with sliced banana, chopped peanuts, extra peanut butter, and a pinch of sea salt. Serve cold or microwave for 30-45 seconds if desired.

Notes
