  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt (if peanut butter is unsalted)

Instructions

  1. In a large mixing bowl, combine 1 cup peanut butter and 1/2 cup honey. Microwave for 20-30 seconds until slightly warm and easier to stir. Alternatively, warm in a saucepan over low heat.
  2. Stir in 1/2 teaspoon vanilla extract and 1/4 teaspoon salt (if using) until smooth and glossy.
  3. Gradually add 1 1/2 cups rolled oats and 1/4 cup ground flaxseed meal. Stir until evenly distributed and the mixture forms a cohesive dough.
  4. Fold in 1/2 cup chocolate chips gently until distributed.
  5. Check consistency: squeeze a small amount in your hand. If too dry, add 1 teaspoon more honey or a splash of milk. If too sticky, add 1 tablespoon more oats.
  6. Optional: Chill the mixture in the fridge for 15-20 minutes for easier handling.
