Quick Garlic Butter Steak Bites with Creamy Mashed Potatoes

Tender sirloin steak bites seared to perfection and tossed in a rich garlic butter sauce, served over velvety Yukon Gold mashed potatoes. This quick and easy recipe delivers steakhouse flavor in under 25 minutes, perfect for weeknight dinners or date nights.

  • 1.5 lbs sirloin steak (or ribeye, cut into 1-inch cubes)
  • 2 tbsp unsalted butter (divided)
  • 4 cloves garlic (minced)
  • 1 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp black pepper (freshly ground)
  • 1 tsp fresh thyme (or 1/2 tsp dried)
  • 1 tbsp fresh parsley (chopped, for garnish)
  • 2 lbs Yukon Gold potatoes (peeled and quartered)
  • 1/2 cup whole milk (warm)
  • 4 tbsp unsalted butter (softened)
  • 1 tsp salt (or to taste)
  • 1/4 tsp garlic powder (optional)

Instructions

  1. Peel and quarter the Yukon Gold potatoes. Rinse under cold water to remove excess starch. Place in a large pot and cover with cold water by about an inch. Add a generous pinch of salt. Bring to a boil over high heat, then reduce to a simmer and cook for 12-15 minutes, until a fork slides through easily. Drain in a colander and let steam dry for 2 minutes.
  2. While the potatoes are still hot, return them to the pot. Add the softened butter and warm milk. Mash with a potato masher until smooth, or use a hand mixer for a creamier texture. Season with salt and garlic powder if using. Cover to keep warm.
  3. Pat the sirloin dry with paper towels. Cut into 1-inch cubes, making sure they are roughly the same size. Season generously with salt and pepper. Let sit at room temperature for 5 minutes.
  4. Place a cast iron skillet over high heat and add the olive oil. When the oil shimmers and just starts to smoke, carefully add the steak bites in a single layer. Do not crowd the pan. Sear undisturbed for 2-3 minutes until a deep brown crust forms. Flip each piece with tongs and cook for another 1-2 minutes for medium-rare.
  5. Reduce the heat to medium-low. Add the butter and minced garlic to the pan. Stir constantly for 30 seconds until the butter melts and the garlic becomes fragrant. Toss the steak bites in the garlic butter until fully coated. If using thyme, add it now. Remove from heat immediately.
  6. Spoon the creamy mashed potatoes onto plates or a serving platter. Top with the garlic butter steak bites and drizzle any remaining pan sauce over the top. Garnish with fresh parsley and serve hot.

Notes

Pat the steak dry for a good sear. Don’t move the steak too soon; let it sear undisturbed for at least 2 minutes. Add garlic after reducing heat to prevent burning. Keep mashed potatoes warm by setting the bowl over a pot of simmering water. For perfect doneness, use a meat thermometer: 130°F for medium-rare, 140°F for medium.
