This quick fantasy fudge with toasted pecans is a foolproof, no-thermometer recipe that comes together in about 15 minutes of active time. Creamy chocolate fudge with crunchy toasted pecans—perfect for gifting or a quick dessert.

Ingredients

Scale
  • 3 cups granulated sugar
  • 3/4 cup unsalted butter
  • 2/3 cup evaporated milk
  • 1/4 teaspoon salt
  • 12 ounces semi-sweet chocolate chips
  • 1 jar (7 ounces) marshmallow creme
  • 1 teaspoon vanilla extract
  • 1 1/2 cups pecan halves or pieces

Instructions

  1. Preheat oven to 350°F. Spread pecans on a rimmed baking sheet and toast for 5-7 minutes, stirring halfway, until fragrant. Let cool, then roughly chop if using whole halves. Set aside.
  2. Line an 8×8-inch baking pan with parchment paper or aluminum foil, leaving overhang on two sides. Lightly grease.
  3. In a large heavy-bottomed saucepan, combine sugar, butter, evaporated milk, and salt. Cook over medium heat, stirring constantly, until butter melts and sugar mostly dissolves (3-4 minutes). Bring to a full rolling boil.
  4. Once boiling, cook for exactly 4 minutes, stirring constantly. If using a candy thermometer, it should read 234°F (soft ball stage).
  5. Remove from heat. Add chocolate chips and marshmallow creme without stirring. Let sit for 1 minute, then stir vigorously until smooth and glossy (2-3 minutes).
  6. Stir in vanilla extract. Fold in toasted pecans, reserving a handful for topping if desired.
  7. Pour mixture into prepared pan and spread evenly. Sprinkle reserved pecans on top and gently press in. Cool at room temperature for 30 minutes, then refrigerate for at least 2 hours until firm.
  8. Lift fudge out using parchment overhang. Cut into 1-inch squares with a sharp knife, wiping blade clean between cuts.

Notes

Toast pecans first and let cool. Use room-temperature chocolate chips and marshmallow creme. Stir constantly during boiling to prevent graininess. If fudge doesn’t set, serve as sauce over ice cream.
