This quick and easy cinnamon roll casserole is perfect for Christmas morning chaos. Made with refrigerated cinnamon rolls, eggs, cream, and vanilla, it bakes in just 20 minutes and tastes like you spent hours on it.

Ingredients

Scale
  • 1 can (12.4 oz) refrigerated cinnamon rolls with cream cheese frosting (about 8 rolls)
  • 4 large eggs, at room temperature
  • ½ cup heavy cream or half-and-half
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ cup chopped pecans or walnuts (optional)
  • ¼ cup raisins or dried cranberries (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish with butter or non-stick spray.
  2. Open the can of cinnamon rolls. Separate the rolls and set aside the frosting packet for the glaze.
  3. Cut each cinnamon roll into quarters. Scatter the pieces evenly in the prepared baking dish.
  4. In a medium mixing bowl, whisk the eggs until light and frothy, about 30 seconds. Add the heavy cream, vanilla extract, and ground cinnamon. Whisk until well combined and smooth.
  5. Pour the custard evenly over the cinnamon roll pieces. Gently toss with a spatula if needed to coat all pieces. Let sit for 2-3 minutes to allow the rolls to absorb the custard.
  6. If using optional toppings (pecans, walnuts, raisins, or dried cranberries), sprinkle them evenly over the top and gently press into the custard.
  7. Bake for 18-22 minutes, until the top is golden brown and the center is set but still slightly jiggly. If the top browns too quickly, tent loosely with aluminum foil.
  8. While the casserole bakes, microwave the reserved cream cheese frosting packet for 10-15 seconds until pourable. Stir; if too thick, add a splash of milk or cream to thin.
  9. Let the casserole rest for 5 minutes after baking to allow the custard to set.
  10. Drizzle the warm cream cheese glaze evenly over the top of the casserole.
  11. Slice into squares and serve immediately. Serve warm, with extra maple syrup if desired.

Notes

For best results, let the assembled casserole sit for 2-3 minutes before baking to allow the rolls to absorb the custard. If making ahead, assemble the night before, cover, and refrigerate. Let sit at room temperature for 15 minutes before baking, adding 3-5 minutes to the baking time. The casserole is done when the top is golden brown and the center is set but slightly jiggly. Leftovers keep in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 300°F for 5-7 minutes or microwave on medium power for 30 seconds.
