  • 2 pounds (900g) fresh strawberries, washed and hulled
  • 8 ounces (225g) mascarpone cheese, softened
  • 3 tablespoons honey, preferably local raw honey
  • 4 ounces (115g) dark chocolate chunks (70% cocoa), broken into bite-sized pieces
  • 1/2 cup (60g) almonds, lightly toasted and roughly chopped
  • A small bunch fresh mint or basil leaves
  • About 12 shortbread cookies or biscotti pieces
  • Zest of 1 lemon, finely grated
  • Optional: A handful of freeze-dried strawberry pieces

Instructions

  1. Rinse and hull about 2 pounds (900g) of fresh strawberries. Pat dry gently with paper towels to avoid sogginess. Cut some strawberries in halves or quarters for variety, leaving some whole for visual appeal.
  2. In a mixing bowl, combine 8 ounces (225g) of softened mascarpone cheese with 3 tablespoons of honey and the zest of 1 lemon. Whip with a hand mixer or whisk until smooth and slightly fluffy.
  3. Lightly toast 1/2 cup (60g) of almonds in a dry skillet over medium heat until golden and fragrant, about 3-5 minutes. Chop roughly once cooled.
  4. Break 4 ounces (115g) of dark chocolate into chunks. Arrange in a small bowl or scatter on the board.
  5. Start by placing small bowls or piles of mascarpone, nuts, and chocolate on the board. Nestle the strawberries around them, varying whole and cut pieces. Tuck fresh mint or basil leaves in between for a pop of green. Add shortbread cookies or biscotti in clusters for easy grabbing.
  6. Drizzle a little extra honey over some strawberry clusters for shine and extra sweetness. Sprinkle a pinch of flaky sea salt over dark chocolate chunks to balance flavors. Optionally, scatter freeze-dried strawberry pieces for a fun crunch.
  7. Keep the board chilled until serving if it sits out for more than 30 minutes.

Keep strawberries fresh by adding them just before serving. Toast nuts carefully to avoid burning. Whip mascarpone gently to avoid graininess. Add cookies and herbs last to prevent sogginess. The board can be customized with dairy-free or gluten-free alternatives.
