Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper and set aside.
  2. In a medium bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.
  3. In a large bowl, beat softened butter and granulated sugar on medium speed until light and fluffy, about 3-4 minutes.
  4. Beat in the egg, pumpkin puree, and vanilla extract until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low until just combined. Do not overmix.
  6. Wrap the dough in plastic wrap and chill for at least 30 minutes.
  7. Lightly flour your surface and rolling pin. Roll dough to about ¼ inch (6 mm) thickness.
  8. Use a 3-inch round cookie cutter to cut out shapes. Place cookies on baking sheets about 1 inch apart.
  9. Bake for 10-12 minutes, until edges just start to turn golden but centers remain slightly soft.
  10. Let cookies cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
  11. Prepare royal icing or melt white chocolate in a piping bag fitted with a small round tip.
  12. Pipe concentric circles on each cookie, then drag lines from the center outward with a toothpick to form spider web patterns.
  13. While icing is still wet, sprinkle edible glitter evenly.
  14. Allow decorated cookies to dry at room temperature for at least 1 hour before serving or storing.
