  • 8 ounces sharp cheddar cheese, grated
  • 8 ounces low-moisture mozzarella cheese, grated
  • 4 ounces cream cheese, softened
  • 2 tablespoons Dijon or whole-grain mustard
  • 1 package sturdy crackers (such as water crackers or pretzel crisps)
  • 1/2 cup pitted black olives
  • 1/2 cup dill pickle spears
  • 2 tablespoons chopped fresh parsley or chives
  • Optional: Jalapeño slices, sun-dried tomatoes, or dried cranberries

Instructions

  1. Grate the sharp cheddar and mozzarella cheese. In a large mixing bowl, combine the shredded cheeses with the softened cream cheese. Mix thoroughly until a uniform dough-like consistency forms. If too dry, add a teaspoon of milk or extra cream cheese.
  2. Transfer the cheese mixture onto a sheet of plastic wrap. Shape it into an oval, football-like form. Press firmly to remove air pockets. Wrap tightly in plastic wrap and refrigerate for at least 30 minutes to firm up.
  3. While the cheese chills, slice the smoked sausage into thin, even rounds (about 1/4-inch thick). If the sausage is soft, chill it in the freezer for 10 minutes before slicing.
  4. Remove the cheese football from the refrigerator and unwrap it. Arrange the sausage slices in overlapping rows around the circumference of the cheese ball, starting from the bottom and working up. Press each slice gently into the cheese to secure it.
  5. Use thin strips of cheese or additional sausage to create the “laces” down the center of the football. Place small bowls of mustard, olives, and pickles around the board. Sprinkle fresh herbs on top for color. Serve immediately with crackers on the side.

Notes

Ensure cream cheese is at room temperature before mixing to prevent lumps. For best results, make the cheese base ahead of time (up to 24 hours). Keep wet ingredients like pickles and olives in separate bowls to prevent sogginess. Serve at room temperature for best flavor.
