A cozy and easy-to-assemble fall party platter featuring spiced nuts, roasted pumpkin seeds, artisan cheeses, fresh seasonal fruits, and sweet drizzles, perfect for gatherings and celebrations.

Ingredients

  • 1 cup mixed nuts (pecans, walnuts, almonds)
  • 1 tablespoon unsalted butter, melted
  • 2 teaspoons pumpkin pie spice
  • 1 tablespoon brown sugar
  • 1/2 teaspoon sea salt
  • 1/2 cup raw pumpkin seeds
  • 1 tablespoon olive oil
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Pinch of salt
  • 8 oz cream cheese, softened
  • 4 oz aged cheddar, sliced
  • 4 oz brie, sliced
  • 1/2 cup pumpkin butter
  • Honey or maple syrup, for drizzling
  • 1 small apple, thinly sliced
  • 1 cup seedless grapes
  • Fresh rosemary sprigs
  • Cinnamon sticks
  • Crackers or sliced baguette
  • Optional: spiced pretzels or cinnamon sugar pita chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine mixed nuts with melted butter, pumpkin pie spice, brown sugar, and sea salt. Toss to coat evenly. Spread on one side of the baking sheet.
  3. In a separate bowl, toss raw pumpkin seeds with olive oil, smoked paprika, cayenne pepper (if using), and a pinch of salt. Spread on the other side of the baking sheet.
  4. Roast nuts and seeds for 12-15 minutes, stirring halfway through. They are done when nuts smell toasted and seeds are golden and crunchy.
  5. While roasting, slice cheddar and brie cheeses, thinly slice the apple, and wash grapes. Arrange rosemary sprigs and cinnamon sticks for garnish.
  6. Set up the board by placing cream cheese in a small bowl, pumpkin butter in another, and drizzle honey or maple syrup over cheeses.
  7. Arrange cheeses, fresh fruit, and crackers on the board with space for nuts and seeds.
  8. Once nuts and seeds are cool enough to handle, scatter them across the board in clusters.
  9. Add rosemary sprigs and cinnamon sticks between items for aroma and decoration.
  10. Serve immediately or cover and chill for up to 2 hours before guests arrive.

Notes

Roast nuts and seeds separately or on different parts of the baking sheet to avoid burning. Let cheeses sit out 15-20 minutes before serving for better texture. Toss apple slices in lemon juice to prevent browning. Nuts and seeds can be roasted a day ahead and stored in airtight containers. Use dairy-free cheeses and gluten-free crackers for dietary adaptations.
