Ingredients

Scale
  • 4 large ripe fresh peaches, sliced (peeled if preferred)
  • 1/2 cup granulated sugar (100g, adjust based on peach sweetness)
  • 1/4 cup brown sugar (50g)
  • 1/2 cup all-purpose flour (65g) for thickening peach filling
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg (optional)
  • 1 tbsp lemon juice
  • 6 tbsp unsalted butter (85g), cut into small pieces
  • 1 cup all-purpose flour (130g) for biscuit topping
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp granulated sugar
  • 6 tbsp cold unsalted butter (85g), cubed for biscuit topping
  • 3/4 cup whole milk or buttermilk (180ml)
  • Fresh peach slices (for board extras)
  • Whipped cream or vanilla yogurt (for board extras)
  • Toasted pecans or walnuts (for board extras)
  • Honey (for drizzling)
  • Fresh mint leaves (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). In a large bowl, combine sliced peaches, granulated sugar, brown sugar, flour, cinnamon, nutmeg (if using), and lemon juice. Toss gently to coat evenly.
  2. Pour peach mixture into a greased baking dish or ramekins. Dot with small pieces of unsalted butter.
  3. In a separate bowl, whisk together flour, baking powder, salt, and sugar for the biscuit topping. Cut in cold cubed butter until mixture resembles coarse crumbs.
  4. Pour in milk or buttermilk and stir just until combined; do not overmix.
  5. Spoon biscuit dough dollops over peach filling, leaving gaps for steam to escape.
  6. Bake for 35-40 minutes until biscuit topping is golden brown and peach filling bubbles around edges. Cover with foil if topping browns too quickly.
  7. While baking, arrange fresh peach slices, whipped cream or yogurt, toasted nuts, and mint leaves on a wooden serving board. Drizzle honey over peaches and nuts before serving.
  8. Place baked cobbler dish or ramekins in the center of the board and serve warm, inviting guests to scoop and enjoy with the extras.

Notes

Use ripe but firm peaches to avoid soggy cobbler. Frozen peaches can be used if thawed and drained well. Do not overmix biscuit dough to keep topping tender. Let cobbler rest 10 minutes after baking to thicken filling. Cover topping with foil if browning too fast. For gluten-free, use a cup-for-cup gluten-free flour blend. For vegan, substitute butter and milk with plant-based alternatives.
