  • 1/2 cup (120ml) vegetable oil (or melted coconut oil)
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 1/2 cups shredded zucchini (about 2 medium zucchinis), lightly squeezed
  • 1 cup (175g) semi-sweet chocolate chips
  • 1/2 cup (60g) chopped toasted walnuts

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or nonstick spray and line with parchment paper.
  2. Toast walnuts on a baking sheet for 5-7 minutes until fragrant and slightly browned. Set aside to cool.
  3. Shred zucchini using a box grater or food processor. Place shredded zucchini in a clean towel or cheesecloth and squeeze out excess moisture.
  4. In a large bowl, sift together flour, baking soda, baking powder, salt, and ground cinnamon.
  5. In a separate bowl, whisk granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until smooth and creamy.
  6. Gently fold the wet mixture into the dry ingredients until just combined; avoid overmixing.
  7. Fold in shredded zucchini, toasted walnuts, and chocolate chips until evenly distributed.
  8. Pour batter into prepared loaf pan and smooth the top. Tap pan gently to release air bubbles.
  9. Bake for 55-60 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Tent with foil if top browns too quickly.
  10. Cool bread in the pan for about 15 minutes, then transfer to a wire rack to cool completely.
