A healthier twist on classic pigs in a blanket, using whole wheat tortillas and chicken sausages for a crispy, tangy Halloween snack that’s ready in under 25 minutes.

  • 810 fully cooked chicken sausages (e.g., Al fresco or Applegate)
  • 4 large (10-inch) whole wheat tortillas
  • 3 tablespoons spicy mustard (e.g., Grey Poupon spicy brown), plus extra for dipping
  • Olive oil spray (or avocado oil spray)
  • 1 teaspoon mustard seeds (for eyes; optional, or use black sesame seeds)
  • A pinch of salt (flaky sea salt or table salt)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Stack 2 tortillas on top of each other. Using a sharp knife or pizza cutter, slice them into 1-inch wide strips (about 6-7 strips per tortilla).
  3. Cut the sausages in half crosswise into 3-inch pieces (or leave whole if using cocktail sausages).
  4. Brush each tortilla strip with a thin, even layer of spicy mustard. Reserve about 2 tablespoons of mustard for dipping.
  5. Take one sausage piece and wrap a tortilla strip around it, slightly overlapping, leaving a small gap at one end for the ‘face.’ Press the end gently to seal.
  6. Place the mummies seam-side down on the prepared baking sheet, about an inch apart.
  7. Lightly spray each mummy with olive oil spray.
  8. Press two mustard seeds (or black sesame seeds) into the exposed sausage end to create eyes.
  9. Bake for 12-15 minutes, rotating the pan at the 8-minute mark, until the tortillas are golden brown and crispy.
  10. Let the mummies rest for 2 minutes before serving.
  11. Serve warm with the reserved spicy mustard for dipping.

Notes

Warm tortillas in the microwave for 10-15 seconds before cutting to prevent cracking. For a gluten-free version, use gluten-free tortillas. For a vegetarian option, swap sausages for vegetarian hot dogs or roasted carrot dogs. To freeze unbaked mummies, arrange on a baking sheet, freeze solid, then transfer to a freezer bag; bake from frozen, adding 3-5 minutes. Reheat leftovers in a 350°F oven for 5-7 minutes (avoid microwave).
