A lighter, gluten-free green bean casserole made from scratch with fresh green beans, creamy coconut milk, and crispy fried onions. It’s a healthier twist on the classic holiday side dish that’s quick, easy, and perfect for Thanksgiving or potlucks.

  • 1.5 lbs (680g) fresh green beans, trimmed and halved
  • 1 can (13.5 oz / 400ml) full-fat canned coconut milk
  • 1 can (10.5 oz / 298g) gluten-free cream of mushroom soup
  • 1.5 cups (about 85g) gluten-free crispy fried onions
  • 1 tablespoon olive oil
  • 8 oz (225g) cremini mushrooms, sliced
  • 1 medium shallot, finely diced
  • 2 cloves garlic, minced
  • Salt and black pepper to taste
  • 1 teaspoon fresh thyme leaves (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Bring a large pot of water to a boil and prepare a bowl of ice water.
  2. Blanch green beans in boiling water for exactly 3 minutes. Transfer to ice water for 2 minutes, then drain and pat dry.
  3. In a large skillet, heat olive oil over medium heat. Sauté mushrooms for 5-7 minutes until browned. Add shallot and cook 2 minutes. Add garlic and thyme (if using) and cook 30 seconds.
  4. Pour coconut milk and cream of mushroom soup into the skillet. Whisk until smooth. Simmer for 5 minutes, stirring occasionally. Season with salt and pepper.
  5. Combine green beans and sauce in a large bowl. Stir to coat. Transfer to a 9×13-inch baking dish.
  6. Toss fried onions with a pinch of salt and sprinkle evenly over the casserole.
  7. Bake for 20-25 minutes until bubbly and topping is golden. For extra crispiness, broil for 1-2 minutes.
  8. Let rest for 5 minutes before serving.

Notes

For make-ahead, assemble without topping and refrigerate up to 24 hours. Add topping just before baking. To freeze, assemble completely (with topping) in a freezer-safe dish, wrap tightly, and freeze up to 3 months. Thaw overnight in refrigerator before baking.
