A creamy, spicy buffalo chicken dip made lighter with cottage cheese and Greek yogurt, perfect for parties and game days without the guilt.

  • 1.5 lbs boneless, skinless chicken breasts (about 23 medium breasts)
  • 8 oz low-fat cream cheese, softened to room temperature
  • 1 cup low-fat cottage cheese (small-curd, 1% or 2% milkfat)
  • 1/2 cup plain Greek yogurt (2% or full-fat)
  • 1/2 cup buffalo wing sauce (e.g., Frank’s RedHot)
  • 1 tablespoon ranch seasoning mix
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 cup shredded reduced-fat cheddar cheese (sharp cheddar recommended)
  • 2 tablespoons chopped green onions (for garnish, optional)
  • 1 tablespoon fresh chives, chopped (optional)

Instructions

  1. Blend the cottage cheese in a blender or food processor until completely smooth, about 30-45 seconds. Set aside.
  2. In a medium mixing bowl, combine the softened cream cheese, blended cottage cheese, and Greek yogurt. Mix until smooth.
  3. Add the buffalo wing sauce, ranch seasoning, garlic powder, and onion powder. Stir until fully incorporated.
  4. Lightly spray the inside of a 4-6 quart slow cooker with non-stick cooking spray. Place the chicken breasts in a single layer at the bottom.
  5. Pour the creamy buffalo mixture over the chicken, spreading evenly.
  6. Cover and cook on LOW for 3-4 hours or on HIGH for 1.5-2 hours, until chicken reaches an internal temperature of 165°F and shreds easily.
  7. Remove the chicken to a cutting board and shred with two forks. Alternatively, shred directly in the slow cooker with a hand mixer on low.
  8. Return the shredded chicken to the slow cooker. Add the shredded cheddar cheese and stir until melted and smooth, about 2-3 minutes.
  9. Cover and cook on LOW for another 10-15 minutes to meld flavors.
  10. Garnish with green onions and chives. Serve warm with tortilla chips, celery sticks, carrot sticks, or crusty bread.

Notes

For best results, use room temperature cream cheese and blend the cottage cheese until smooth. Cooking on LOW yields a creamier texture. The dip tastes even better the next day. For a thicker dip, leave the lid off for the last 10-15 minutes of cooking. For a thinner dip, stir in a tablespoon of milk or chicken broth.
