Lightened-Up One-Pot Creamy Chicken Alfredo (Easy & Healthy!)

A lighter, healthier version of classic chicken alfredo that comes together in one pot in about 30 minutes. This creamy, comforting dish uses milk and a touch of cream cheese instead of heavy cream, and the pasta’s own starch thickens the sauce perfectly.

  • 1 lb boneless, skinless chicken breasts (about 2 medium), cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon garlic powder
  • 8 oz fettuccine or linguine, broken in half if desired
  • 3 cups low-sodium chicken broth
  • 1 cup 2% milk
  • 3 cloves garlic, minced
  • 2 tablespoons light cream cheese, softened
  • 3/4 cup freshly grated parmesan cheese (Parmigiano-Reggiano recommended)
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)
  • Pinch of nutmeg

Instructions

  1. Season and brown the chicken: Pat chicken pieces dry with paper towels. Season with salt, pepper, and garlic powder. Heat olive oil in a large deep skillet or Dutch oven over medium-high heat. Add chicken in a single layer (work in batches if needed) and cook for 4-5 minutes until golden brown on one side. Flip and cook another 3-4 minutes until cooked through. Transfer to a plate and set aside. Do not clean the pan.
  2. Sauté the garlic: Reduce heat to medium. Add minced garlic to the same pan and cook for about 30 seconds, stirring constantly, until fragrant. Add a splash of chicken broth if the pan seems too dry.
  3. Build the sauce base: Pour in remaining chicken broth and milk. Use a wooden spoon to scrape up browned bits from the bottom of the pan (deglazing). Bring liquid to a gentle simmer.
  4. Add the pasta: Add fettuccine to the simmering liquid, pressing down gently so it’s mostly submerged. Cover the pan and let simmer for 8-10 minutes, stirring occasionally, until pasta is al dente and most liquid is absorbed.
  5. Incorporate the cream cheese: Remove lid. Add softened cream cheese and stir until completely melted and incorporated. Sauce should be creamy and slightly thickened. If too thick, add a splash of warm water or milk.
  6. Add the parmesan: Remove pan from heat. Add grated parmesan and a pinch of nutmeg. Stir vigorously until cheese is fully melted and sauce is smooth and glossy.
  7. Return the chicken to the pan: Add cooked chicken back along with any accumulated juices. Toss everything together until chicken is coated and heated through. Taste and adjust seasoning.
  8. Serve immediately: Spoon into bowls, garnish with fresh parsley if desired, and enjoy while hot.

Notes

Make sure cream cheese is softened to room temperature before adding to prevent lumps. Always grate parmesan from a block for smooth melting. Keep heat at a gentle simmer when adding dairy to prevent separation. For meal prep, undercook pasta by 1 minute and add splash of milk when reheating. Leftovers keep in refrigerator for up to 3 days. Freezing not recommended.
