  • 1/2 cup pure maple syrup
  • 1/3 cup milk (any kind)
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 box (15.25 oz) yellow cake mix
  • 1/2 cup chopped pecans
  • 1/4 cup unsalted butter, melted
  • 2 tablespoons brown sugar (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish with butter or cooking spray.
  2. In a large mixing bowl, whisk together the pumpkin puree, maple syrup, milk, eggs, vanilla extract, pumpkin pie spice, cinnamon, and salt until smooth and well combined.
  3. Pour the pumpkin mixture into the prepared dish and spread it evenly with a spatula.
  4. Sprinkle the dry yellow cake mix evenly over the pumpkin mixture. Do not stir.
  5. Sprinkle the chopped pecans and brown sugar (if using) evenly over the cake mix.
  6. Drizzle the melted butter evenly over the top in a zigzag pattern.
  7. Bake for 35-40 minutes, until the top is golden brown and the edges are bubbly. The center may still look slightly jiggly but will set as it cools.
  8. Cool for at least 15 minutes before serving. For cleaner slices, cool for 30 minutes.

Notes

Use 100% pure pumpkin, not pumpkin pie filling. Real maple syrup is recommended for best flavor. Toasting pecans before adding enhances flavor. Let cake cool completely for clean slices. Store leftovers in an airtight container in the refrigerator for up to 5 days. Freezes well for up to 3 months.
