Light Apple Cider Mimosa with Easy Cinnamon Sugar Rim

A light and festive fall mimosa made with apple cider, dry Champagne or prosecco, and a cinnamon sugar rim. Perfect for brunch, this quick and easy cocktail captures cozy orchard flavors in a glass.

  • 1 bottle (750 ml) Champagne or prosecco, chilled (dry Brut recommended)
  • 1 cup apple cider, chilled (unfiltered preferred)
  • 2 tablespoons maple syrup (for rimming glasses)
  • 1 tablespoon ground cinnamon
  • 2 tablespoons granulated sugar
  • Apple slices, thinly sliced (for garnish, optional)
  • Cinnamon sticks (for garnish)

Instructions

  1. In a shallow dish, combine 2 tablespoons granulated sugar and 1 tablespoon ground cinnamon. Whisk with a fork until evenly mixed. Set aside.
  2. Pour 2 tablespoons maple syrup into another shallow dish.
  3. Dip the rim of a champagne flute into the maple syrup, rotating gently to coat the entire edge. Let excess drip off, then dip the rim into the cinnamon sugar mixture, pressing lightly to adhere. Repeat for all 4 glasses. Let rims set for at least 1 minute.
  4. Optional: Place rimmed glasses in the fridge for 5-10 minutes to help the rim stay crisp.
  5. Pour 1/4 cup (60 ml) chilled apple cider into each glass.
  6. Slowly pour chilled sparkling wine into each glass, filling to about 1 inch from the rim. Pour gently to avoid disturbing the rim.
  7. Garnish each glass with a thin apple slice and a cinnamon stick. Serve immediately.

Notes

For best results, chill all ingredients beforehand. Use a dry Brut Champagne or prosecco to balance sweetness. If using sweeter sparkling wine, reduce apple cider to 3/4 cup. Let rim set before pouring to prevent dissolving. For a non-alcoholic version, substitute sparkling apple cider or sparkling water.
