An effortless, set-it-and-forget-it chicken tortilla soup made in the crockpot with pantry staples. It’s light, brothy, and packed with smoky flavor from fire-roasted tomatoes and spices.

  • 1 lb boneless, skinless chicken breasts (or thighs)
  • 1 (15 oz) can fire-roasted diced tomatoes
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup frozen or canned corn kernels
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • Crushed tortilla chips (for topping)
  • Fresh cilantro, chopped (for topping)
  • Diced avocado (for topping)
  • Lime wedges (for serving)
  • Shredded Monterey Jack or cheddar cheese (optional, for topping)

Instructions

  1. Layer the diced onion and minced garlic in the bottom of a 6-quart slow cooker. Place the chicken breasts on top.
  2. Add the fire-roasted diced tomatoes (with juices), drained black beans, and corn. Do not stir.
  3. In a small bowl, whisk together chili powder, cumin, smoked paprika, oregano, 1 teaspoon salt, and 1/2 teaspoon black pepper. Sprinkle evenly over the ingredients.
  4. Pour the chicken broth around the edges to avoid washing off the spices. The liquid should mostly cover the ingredients.
  5. Cover and cook on low for 4-6 hours or on high for 3-4 hours, until the chicken is tender and shreds easily.
  6. Remove the chicken to a cutting board and shred with two forks. Return the shredded chicken to the pot and stir to combine. Taste and adjust seasoning.
  7. Turn off the slow cooker or set to warm. Let the soup rest for 10 minutes before serving.
  8. Serve hot with desired toppings: crushed tortilla chips, cilantro, avocado, lime wedges, and cheese.

Notes

For a thicker soup, mash half the black beans before adding. For extra flavor, toast the spices in a dry skillet for 30 seconds before adding. Prep ingredients the night before for a quick morning assembly. Add a squeeze of lime juice to the pot before serving for brightness.
