Ingredients

Scale
  • 4 large sweet potatoes (about 3 pounds / 1.4 kg)
  • 4 tablespoons (56 g) unsalted butter, softened
  • 4 ounces (113 g) cream cheese, softened
  • 1/4 cup (60 ml) pure maple syrup
  • 2 large eggs, lightly beaten
  • 1 teaspoon (5 ml) vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 8 slices thick-cut bacon (about 8 ounces / 225 g)
  • 1/4 cup (50 g) packed brown sugar
  • 2 tablespoons (30 ml) maple syrup
  • 1/4 teaspoon black pepper (optional)
  • 1/2 cup (60 g) chopped pecans
  • 2 tablespoons (16 g) all-purpose flour
  • 2 tablespoons (25 g) packed brown sugar
  • 2 tablespoons (28 g) cold butter, cubed

Instructions

  1. Preheat oven to 400°F (200°C). Scrub sweet potatoes, prick with a fork, and roast on a parchment-lined baking sheet for 45-60 minutes until soft. Let cool, then peel.
  2. While sweet potatoes roast, line another baking sheet with parchment. Lay bacon slices in a single layer. Mix 1/4 cup brown sugar, 2 tablespoons maple syrup, and black pepper; brush over bacon. Bake at 400°F for 15-20 minutes, flipping halfway, until crispy. Chop into small pieces.
  3. Reduce oven temperature to 350°F (175°C). In a large bowl, combine peeled sweet potatoes, butter, cream cheese, 1/4 cup maple syrup, eggs, vanilla, cinnamon, and salt. Beat with a hand mixer until smooth and creamy.
  4. Grease a 9×13-inch baking dish. Spread sweet potato mixture evenly. In a small bowl, combine pecans, flour, 2 tablespoons brown sugar, and cold butter; mix until crumbly. Sprinkle crumble over sweet potatoes, then top with chopped candied bacon.
  5. Bake at 350°F for 25-30 minutes until edges are bubbly and top is golden. If bacon darkens too much, tent with foil for last 10 minutes. Let rest 5 minutes before serving.

Notes

For best texture, roast sweet potatoes instead of boiling. Let cream cheese and butter come to room temperature for smooth blending. Watch bacon closely to prevent burning. Assemble casserole (without bacon) up to 2 days ahead; add bacon before baking. Double the bacon for extra snacking.
