  • Whole turkey (10-14 pounds), fresh or fully thawed
  • 1 cup (2 sticks) unsalted butter, softened
  • 3 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh sage, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons kosher salt (Diamond Crystal preferred)
  • 1 tablespoon black pepper, freshly ground
  • 1 lemon, zested and halved
  • 1 large onion, quartered
  • 2 carrots, roughly chopped
  • 2 stalks celery, roughly chopped
  • 1 cup chicken or turkey broth

Instructions

  1. Take the turkey out of the fridge 1 hour before roasting to let it come to room temperature.
  2. Preheat oven to 425°F (220°C).
  3. In a small bowl, combine softened butter, chopped rosemary, thyme, sage, minced garlic, lemon zest, salt, and pepper. Mix until evenly distributed.
  4. Remove giblets and neck from turkey cavity. Pat turkey completely dry with paper towels.
  5. Loosen the skin over the breast and thighs. Slide about half the herb butter directly onto the meat under the skin. Rub remaining butter all over the outside of the turkey.
  6. Stuff the cavity with quartered onion, lemon halves, and extra herb sprigs. Tie legs with kitchen twine if desired; tuck wing tips under the bird.
  7. Scatter chopped carrots and celery in the bottom of a roasting pan. Place turkey on top. Pour broth into the pan, avoiding the buttered skin.
  8. Roast at 425°F (220°C) for 30 minutes without opening the oven door.
  9. Reduce heat to 350°F (175°C) and continue roasting for about 13-15 minutes per pound (approximately 2.5 to 3 hours for a 12-pound turkey). Start checking temperature at the 2-hour mark.
  10. Check for doneness: Insert an instant-read thermometer into the thickest part of the thigh (avoiding bone) – it should read 165°F (74°C). The breast should read 160°F (71°C). If skin browns too quickly, tent loosely with foil.
  11. Transfer turkey to a cutting board and let rest for at least 20-30 minutes, loosely covered with foil.
  12. Carve and serve: Remove twine, slice breast against the grain, remove legs and thighs. Arrange on a platter and pour accumulated juices over the top.
