  • 68 bone-in, skin-on chicken thighs (about 2.53 lbs total)
  • 2 large fresh lemons
  • 45 garlic cloves, thinly sliced
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 1/2 teaspoons kosher salt (or 1 teaspoon table salt)
  • 1/2 teaspoon freshly ground black pepper
  • Small handful fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken thighs completely dry with paper towels.
  3. In a small bowl, combine olive oil, dried oregano, dried thyme, garlic powder, onion powder, salt, and black pepper to make a herb oil paste.
  4. Rub the herb oil all over each chicken thigh, including under the skin by gently lifting it with your fingers.
  5. Slice one lemon into thin rounds (about 1/4 inch thick), then cut each round in half. Slice garlic cloves thinly.
  6. Tuck 2-3 lemon half-slices and 1-2 garlic slices under the skin of each thigh, spreading them evenly.
  7. Arrange the chicken thighs skin-side up in a 9×13 inch baking dish, leaving space between each. Squeeze the juice from the second lemon over the top.
  8. Bake for 35-40 minutes, until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh and the skin is golden and crispy. For extra color, broil for the last 2-3 minutes if needed.
  9. Let the chicken rest in the pan for 5-10 minutes before serving to allow juices to redistribute.
  10. Garnish with chopped fresh parsley and serve with pan juices spooned over the top.

Pat the chicken completely dry for crispy skin. Use a meat thermometer for perfect doneness. Let chicken come to room temperature 20 minutes before cooking for even cooking. Don’t overcrowd the pan.
