  • 2 cloves garlic, minced
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika (optional)
  • 1 teaspoon salt, plus more to taste
  • ½ teaspoon freshly cracked black pepper
  • 1 teaspoon fresh thyme, chopped or ½ teaspoon dried (optional)

Instructions

  1. Pat the chicken breasts dry with paper towels, then place them between two sheets of plastic wrap. Using a meat mallet or rolling pin, gently pound the breasts to about ½ inch (1.3 cm) thickness to ensure even cooking. This should take about 5 minutes.
  2. In a mixing bowl, whisk together honey, Dijon mustard, spicy brown mustard, olive oil, minced garlic, apple cider vinegar, smoked paprika, salt, black pepper, and thyme. This takes around 3 minutes.
  3. Place the flattened chicken breasts in a large zip-top bag or shallow dish. Pour half of the marinade over the chicken, reserving the other half for basting later. Seal or cover and refrigerate for at least 30 minutes, up to 2 hours.
  4. Preheat your grill to medium-high (about 400°F or 204°C). Oil the grill grates lightly to prevent sticking. This usually takes 10 minutes.
  5. Remove chicken from the marinade, letting excess drip off. Place on the grill and cook for 5-6 minutes on the first side, then flip. Start basting the grilled side with the reserved marinade immediately after flipping. Cook another 5-6 minutes, basting once more halfway through, until an internal temperature of 165°F (74°C) is reached.
  6. Transfer the chicken to a plate and cover loosely with foil. Let it rest for 5 minutes before slicing to allow juices to redistribute.
