Instructions

  1. Activate the yeast: In a large bowl, combine warm water, sugar, and yeast. Let sit for 5-10 minutes until foamy.
  2. Mix the dough: Add melted butter and salt to the yeast mixture. Gradually add flour. Knead for 5-7 minutes until smooth and slightly tacky.
  3. First rise: Grease the bowl, cover with a damp towel or plastic wrap, and let rise in a warm spot for 1 hour or until doubled in size.
  4. Shape the bites: Punch down dough. Divide into 12-15 pieces. Roll each into a 12-inch rope. Place on a parchment-lined baking sheet.
  5. Prepare baking soda bath: Bring 6 cups of water to a boil in a large pot. Stir in baking soda carefully.
  6. Boil pretzels: Drop pretzels into boiling water, 2-3 at a time. Boil for 30 seconds per side. Remove with a slotted spoon and return to the baking sheet.
  7. Bake: Preheat oven to 425°F (220°C). Brush boiled pretzels with melted butter and sprinkle generously with coarse sea salt. Bake for 12-15 minutes until deep golden brown. Cool for 5 minutes.

Do not use pre-shredded cheese as it contains anti-caking agents that prevent smooth melting. Ensure water temperature for yeast is between 105°F and 115°F. The baking soda bath is crucial for the authentic pretzel crust and color. If using gluten-free flour, expect a stickier dough and slightly less chewy texture.
